Broccoli Soup Low in Fat and Cholesterol

I had a huge bag of broccoli and went looking for a recipe for broccoli soup and I came upon a great site. lowfatcooking.about.com.

I made the soup and it was awesome. Thick creamy and flavorful. The recipe is as follows.

Cook time 30 min

Ingredients
2 tsp olive oil
half medium onion
1stalk of celery, finely chopped
1medium Yukon Gold Potato,peeled and chopped
4cups of fresh broccoli,including stems,chopped
2cups of low sodium,fat-freechicken or vegetable soup
one and one-half cups nonfat milk

Preparation
Heat oil in a soup pot or dutch oven. Gently saute onion and celery for 3 to 4 min, until onion is softened. Add potato chopped broccoli,followed by the broth and milk. Bring to a boil, then reduce heat,cover, and simmer for 20 min,until vegetables are tender.

Allow soup to cool slightly. At this point you can either use a cusinart mixing stick blending right in stock pot or place soup in a blender in two or three batches until smooth. I like the mixing stick everything is done in one pot. if using the blender after blending return mixture to pot and heat gently until ready to serve.

This soup is so light and airy you have to make it to appreciate that the ingredients used are not laden with creams or butters.
